NOTE: This recipe states chicken breast to make it healthier but our secret is to use chicken thighs instead.
Ingredients
- 1 pound chicken breast
- 1 teaspoon chinese 5 spice
- 2 tablespoons olive oil
- 1 cup broccoli
- 1/2 cup carrots
- 1 cup cauliflower
- 1/2 cup bell peppers
- 1/2 cup snow peas
- 1 tablespoon corn starch
- 2 tablespoons water
- 1/4 cup low sodium chicken broth
- 3 tablespoons low sodium soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon sesame oil
- 1/2 teaspoon red pepper flakes
Instructions
- In a medium size bowl, whisk together corn starch and water. Add remaining sauce ingredients (chicken broth, soy sauce, maple syrup, toasted sesame oil, and red pepper flakes) and whisk to combine. Set aside.
- Add one tablespoon of olive oil to a large skillet or wok and heat over medium high heat.
- Add chicken and season with Chinese 5 spice. Cook for 3 to 5 minutes or until cooked through. Remove from skillet.
- Reduce heat to medium and add remaining tablespoon of oil to the skillet.
- Add broccoli, cauliflower, bell pepper, snow peas, and carrots and cook, stirring occasionally, just until crisp tender.
- Add ginger and garlic and cook for an additional minute.
- Add chicken back into the skillet and stir to combine.
- Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.
- Bring to a boil, stirring occasionally, and let boil for one minute.
- Serve with rice and/or chow mein if desired.2.5
