Ingredients
- 1 1/4 cups whole wheat pastry flour
- 1/4 cup rolled oats
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 4-6 tbsp ice water
- 1 cup pecan halves
- 1/2 cup dried cranberries
- 1/4 cup maple syrup
- 1/4 cup packed brown sugar
- 2 tbsp unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp peppermint extract
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together flour, oats, and salt.
- Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
- Form the dough into a disc, wrap it in plastic wrap, and chill for at least 30 minutes.
- While the dough is chilling, prepare the filling: In a medium bowl, combine pecans, cranberries, maple syrup, brown sugar, melted butter, egg, vanilla extract, cinnamon, nutmeg, and peppermint extract.
- Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
- Cut out rectangles approximately 3x5 inches.
- Place a spoonful of filling down the center of each rectangle.
- Fold the dough over the filling to create a log shape, pinching the edges to seal.
- Place the logs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown.
