We've swapped out refined flour for whole wheat pastry flour, added antioxidant-rich cranberries, and infused the filling with warm spices like cinnamon and nutmeg. Ingredients

  • 1 1/4 cups whole wheat pastry flour
  • 1/4 cup rolled oats
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 4-6 tbsp ice water
  • 1 cup pecan halves
  • 1/2 cup dried cranberries
  • 1/4 cup maple syrup
  • 1/4 cup packed brown sugar
  • 2 tbsp unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp peppermint extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, oats, and salt.
  3. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
  5. Form the dough into a disc, wrap it in plastic wrap, and chill for at least 30 minutes.
  6. While the dough is chilling, prepare the filling: In a medium bowl, combine pecans, cranberries, maple syrup, brown sugar, melted butter, egg, vanilla extract, cinnamon, nutmeg, and peppermint extract.
  7. Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
  8. Cut out rectangles approximately 3x5 inches.
  9. Place a spoonful of filling down the center of each rectangle.
  10. Fold the dough over the filling to create a log shape, pinching the edges to seal.
  11. Place the logs on a baking sheet lined with parchment paper.
  12. Bake for 20-25 minutes, or until golden brown.
  13. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
